Chef Mark Poynton shares his top tips on cooking fried eggs. Did you know that you should only salt the egg white?

Mark's top tips

* Only salt the white of the egg when it's in the pan, or else you won't get a beautifully runny yolk.

* Use fresh eggs.

* Crack the egg into a bowl first.

* The pan should be warm - not hot or cold.

* For a fancy finish, use a cutter to make your fried egg circular - that way you'll have equal proportions of yolk to white.
