Egg fried rice recipe

The perfect accompaniment to any Chinese dish. You'll need rice, egg, petit pois and spring onions, plus plenty of soy sauce.

Ingredients
- 1 cup cooked rice
- 1 egg
- 0.5 cups petit pois
- 2 spring onions
- 1 dash light soy sauce
- 1 dash sesame oil
- 1 pinch salt and pepper to taste
Step-by-step
- Heat 2 tablespoons vegetable oil in a wok on high heat.
- Crack the egg into the wok and fry. Once the egg is half cooked, break the yolk and cut into the white with your spatula.
- Now push the egg to one side of the wok to allow space for your rice.
- Add 1 tbsp vegetable oil to the wok. Once smoking hot, add the rice to the wok and mix well, trying to separate rice so as to remove any large clumps.
- Once the rice is well mixed, add the peas and continue to stir-fry. Pour a substantial amount of light soy sauce over the rice and stir-fry.
- Add salt and pepper to taste. Finally add a dash of sesame oil and stir.
- Serve in a large bowl with spring onion scattered on top.

I cook curries from scratch, I make pasta sauces from scratch, I know how to make a decent risotto, I even make stir fry sauces from scratch from time to time (when I can be bothered!) BUT I have never even attempted egg fried rice but have always wanted to know how it's done; thanks! I look forward to road-testing this sometime soon!
