Poached egg recipe

It's one of those things that everyone sort of freaks out about but it's incredibly simple, the main thing is having really good fresh eggs.

  • 1 Egg
  • 1 drop of white wine vinegar
  • 1 pinch Salt
  • 1 pinch Pepper

Step-by-step

  1. Check your egg is fresh by dropping it in a bowl of water. If it floats it is not fresh and will not be great fro poaching
  2. Break your egg into a bowl
  3. Add a drop of white wine vinegar to a saucepan of water and bring to a boil then turn down the heat so that the water is just below a simmer
  4. Pour the egg into the water in one quick motion
  5. Cook for 3-4 minutes, checking it after about 2½ minutes
  6. Remove the egg from the saucepan and dry slightly on kitchen paper
  7. Season with salt and pepper
