Leftover turkey sandwich with gravy mayo and Tabasco ketchup recipe

Turkey gravy mayo and bloody mary ketchup turn this leftover turkey sandwich into something extra special.

Ingredients

  • 1 piece of focaccia bread or an English muffin
  • 60 g leftover turkey
  • 1 dash of Tabasco sauce
  • 1 tbsp ketchup
  • 2 tbsp leftover gravy
  • 1 tbsp mayonnaise
  • 1 dash of Worcestershire sauce
  • 1 squeeze of lemon juice
  • 1 egg
  • 1 handful crushed crisps
  • 1 pinch celery salt
  • 1 handful shredded baby gem lettuce

  • 2.1 oz leftover turkey
  • 1 dash of Tabasco sauce
  • 1 tbsp ketchup

  • 1 egg
  • 1 handful crushed crisps
  • 1 pinch celery salt
  • 1 handful shredded baby gem lettuce

  • 2 tbsp leftover gravy

  • 1 dash of Worcestershire sauce

  • 1 egg
  • 1 handful crushed crisps
  • 1 pinch celery salt
  • 1 handful shredded baby gem lettuce

Step-by-step

  1. First, make the turkey gravy mayo. Mix the leftover gravy with the mayonnaise.
  2. Next, make the bloody mary ketchup. Combine the ketchup with a dash (or three) of Tabasco sauce, Worcestershire sauce and the lemon juice. Put aside.
  3. Place the leftover turkey in a pan with a splash of water or add some more leftover gravy, and heat until piping hot.
  4. Fry an egg either sunny side up or flipped, depending on how you like it.
  5. Cut the bread or muffin in half and slather the top in the turkey gravy mayo, making sure to cover every corner.
  6. Cover the bottom of the bread with a generous pile of hot turkey then cover the meat with the bloody mary ketchup.
  7. Roughly tear the baby gem lettuce and place it on top of the turkey and ketchup. Plonk the fried egg on top of the lettuce.
  8. Crush the crisps in the bag, add a pinch of celery salt, shake it up and whack them on the egg.
  9. Place the lid on top, give it a bit of a squish, take a bite.
