Roasted purple sprouting broccoli recipe

Serve this deliciously creamy dish with a juicy steak or a Sunday roast. It also works as a great alternative to traditional Christmas sides. 

Ingredients

  • 500 g purple sprouting broccoli, trimmed and washed
  • 400 ml double cream
  • 4 cloves of garlic, sliced
  • 2 dried chillies, deseeded and chopped
  • 8 anchovy fillets
  • 2 sprigs of rosemary
  • 100 g parmesan
  • 3 tbsp olive oil, for frying
  • 5 tbsp white wine
  • 17.6 oz purple sprouting broccoli, trimmed and washed
  • 14.1 fl oz double cream
  • 4 cloves of garlic, sliced
  • 2 dried chillies, deseeded and chopped

  • 3.5 oz parmesan
  • 3 tbsp olive oil, for frying
  • 5 tbsp white wine

  • 3.5 oz parmesan
  • 3 tbsp olive oil, for frying
  • 5 tbsp white wine

Step-by-step

  1. Pre-heat the oven to 190°C (375°F/gas mark 5).
  2. Set a medium-sized heavy-based pan over a medium heat.
  3. Heat the olive oil. Throw in the garlic, chilli, rosemary and anchovies.
  4. Fry until the garlic takes on a little colour – a golden tinge around its edges.
  5. Add the wine, boil for a few seconds and add the cream.
  6. Bring to a simmer and turn the heat down. Reduce this sauce until thick enough to coat the back of a spoon.
  7. Blanch the purple sprouting broccoli in boiling water for 1 minute before straining through a colander. Allow to steam dry.
  8. Lay the broccoli in an ovenproof dish, pour or spoon over the cream sauce and finally scatter over the parmesan.
  9. Bake in the oven for 10–12 minutes until golden and bubbling.
