Leftover Christmas pudding crumble recipe

Whether you're using up leftovers or just looking for a creative way to cook with Christmas pudding, this crumble will be a sure-fire success. 

Ingredients

For the crumble
  • 120 g butter
  • 270 g plain flour
  • 350 g Christmas pudding
  • 4.2 oz butter

Step-by-step

  1. Preheat the oven to 180°C/355°F/gas mark 4.
  2. Puree the Christmas pudding in a food blender until completely smooth. Note: pureeing is important as if you just crumble it, it may burn.
  3. Cube the butter and add to the flour, followed by the smooth Christmas pudding. Rub the butter and Christmas pudding into the flour to create a light breadcrumb texture.
  4. Place the apples in a bowl and mix in the cinnamon and caster sugar, heat on high in the microwave for approx 3 minutes until the apple just begins to soften slightly.
  5. Transfer the apples into an oven-proof dish and top with the crumble.
  6. Bake in the oven for 20–30mins.
