Spinach and nutmeg muffins recipe

For some people a savoury snack goes down well at teatime.  This is a really simple recipe for savoury spinach muffins. Try them with a refreshing cup of tea!

Ingredients

  • 150 g Self raising flour
  • 150 g Plain flour
  • 2 tsp Baking powder
  • 150 g Mature cheddar cheese, grated
  • 0.5 tsp Salt
  • 0.5 tsp Cracked black pepper
  • 2 Eggs
  • 250 ml Milk
  • 150 g Cooked and chopped spinach
  • 0.5 Nutmeg, freshly grated
  • 3 Spring onions chopped
  • 5.3 oz Self raising flour
  • 5.3 oz Plain flour
  • 2 tsp Baking powder
  • 5.3 oz Mature cheddar cheese, grated
  • 0.5 tsp Salt
  • 0.5 tsp Cracked black pepper

  • 8.8 fl oz Milk
  • 5.3 oz Cooked and chopped spinach
  • 0.5 Nutmeg, freshly grated
  • 3 Spring onions chopped
  • 5.3 oz Self raising flour
  • 5.3 oz Plain flour
  • 2 tsp Baking powder
  • 5.3 oz Mature cheddar cheese, grated
  • 0.5 tsp Salt
  • 0.5 tsp Cracked black pepper
  • 2 Eggs
  • 1.1 cups Milk
  • 5.3 oz Cooked and chopped spinach
  • 0.5 Nutmeg, freshly grated
  • 3 Spring onions chopped

Step-by-step

  1. Pre-heat the oven to 180°C.
  2. Sieve the flour and baking powder on to the cheese with the salt and pepper.
  3. In a separate bowl, beat the eggs and the milk together and add to the cheese mixture and fold together.
  4. Now add the spinach, spring onions and nutmeg and stir to combine thoroughly.
  5. Divide the mixture evenly into a muffin or cup cake tray to make eight muffins and bake in the oven for 20 minutes.
  6. These muffins make a great savoury teatime treat served warm straight from the oven.
