Dark 'n' Stormy biscuits recipe

When the weather outside is frightful, there's nothing like curling up with a Dark 'n' Stormy: a delicious blend of vibrant Bermudan flavours like dark rum, caramel and lime. But we're not talking about the cocktail here; we're talking boozy, zesty, chocolate-dipped biscuits.

The perfect edible present to package up and post to a sweet-toothed friend this Christmas, these biscuits – inspired by the legendary Dark 'n' Stormy drink – are sturdy enough to survive the post, and delicious enough to deliver plenty of festive cheer wherever they may travel.

Not only that, the recipe couldn't be simpler. Just throw the ingredients into a food processor, roll out your dough, then get baking!

Dipped in dark chocolate and decorated with a dusting of lime zest, they're hard to resist – so if you want to gift them to someone special, get them sealed in a tub and wrapped up pronto. Otherwise, you just might give in to temptation and eat them yourself...

  • 300 g plain flour, plus extra for dusting
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 150 g brown sugar
  • 2 tbsp Goslings Black Seal Rum
  • 1 large egg
  • 100 g margarine, plus extra for greasing
  • 3 tbsp golden syrup
  • 100 g dark chocolate, melted
  • 1 lime, zest only
  • 10.6 oz plain flour, plus extra for dusting
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 5.3 oz brown sugar
  • 2 tbsp Goslings Black Seal Rum
  • 1 large egg
  • 3.5 oz margarine, plus extra for greasing
  • 3 tbsp golden syrup
  • 3.5 oz dark chocolate, melted
  • 1 lime, zest only
  • 10.6 oz all-purpose flour, plus extra for dusting
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 5.3 oz brown sugar
  • 2 tbsp Goslings Black Seal Rum
  • 1 extra large egg
  • 3.5 oz margarine, plus extra for greasing
  • 3 tbsp golden syrup
  • 3.5 oz dark chocolate, melted
  • 1 lime, zest only

Step-by-step

  1. Preheat the oven to 180°C/160°C fan/350°F/gas mark 4 and lightly grease a baking tray (baking sheet).
  2. Add all the ingredients, apart from the dark chocolate and lime zest, to a food processor. Pulse to mix, so that everything is well incorporated and comes together to form a firm dough. 
  3. On a work surface lightly dusted with flour, roll the dough into a sausage shape, then cut into 12 equal pieces.   
  4. Use the palm of your hand to flatten each piece of dough out into a round cookie shape. Place on the prepared baking tray (sheet) and cook in the preheated oven for 10-12 minutes.  
  5. Allow the biscuits to cool completely before dipping in melted chocolate. Finish with a grating of lime zest and package up in an airtight container, ready to gift.
