It's blackberry season and these hedgerow legends are very versatile in the kitchen – especially in desserts.

Blackberry cottage tart

A real crowd pleaser (pictured above), and the perfect end to a dinner party with friends. Make your own sweet citrus pastry, then fill the tart with a buttery, lemony, soured cream custard, and a blackcurrant jelly. Arrange fresh blackberries on top of the tart neatly, and enjoy with a cup of tea.

A tangy fool, made from blackberries, sugar, lemon juice, a drop or two of vanilla extract, and a lot of whipping cream. The classic fool is a British dessert dating back to the 16th century, and always consists of sweetened fruits folded into cream.
