It's Pancake Day! First perfect the basics, then pick one of our snazzy recipes to jazz it up on the day.

It’s Pancake Day, hoorah! Let's start with the basic recipe, which you can find in full here: to make enough batter to serve eight people, sift 120g of plain flour into a bowl and make a well in the centre; then add two eggs and beat with a whisk or fork; gradually beat in 300ml of milk until you have a smooth batter, with the consistency of double cream; cover and stand in the fridge for at least 30 minutes; heat a little vegetable oil in a pan and pour in enough batter to coat the base; cook each one for 1-2 minutes on each side; enjoy!
