My girls just love helping me to make these little babies, not only because they get to make a mess in the kitchen with mum, but also because they know how utterly delicious they are!
By adding sweet apple to the batter, there is no need for any added sugar.

Ingredients
- 225 g (7.9oz) plain flour
- 2 tsp baking powder
- 2 eggs
- 300 ml (10.6fl oz) almond milk
- 1 tsp vanilla extract
- 2 medium apples peeled and coarsely grated
- 1 cup melted butter
Step-by-step
- Sift the flour and baking powder into a large bowl and make a well in the middle. Pour the almond milk and vanilla extract into a jug with the egg and whisk together.
- Then pour into the flour, whisking continuously until you have a smooth batter. Tip in the grated apple and stir to combine. Heat a non-stick pan on a medium heat and brush it with some of the melted butter.
- Then pour a ladleful of the batter onto the pan and cook till bubbles form, before turning it over and cooking on the other side. Serve with a light sprinkling of icing sugar to make them pretty!

Sorry about that ally988! You add the grated apple after you've whisked the batter together (I've amended the recipe slightly). As for the type of apple, anything will work, so pick your favourite! I think Nadia went for Granny Smith.

If you want an even lower calorie version just make up the batter for your pancakes and sprinkle Canderel over them, tastes just like sugar with some lemon juice if you like. The other way I have them is to pour low cal yoghurt over them, filling and tasty.
