Lemon chicken with fennel

Monica Galetti's recipe for lemon chicken (pictured above) uses only half a dozen ingredients but yields terrific results. If you're very hungry, serve with some extra greens. "No fuss, just let the oven do its thing," says Monica. That's what we like to hear on a weeknight.

Chicken korma

kormaYour usual takeaway isn’t a patch on Anjum Anand’s homemade chicken korma. Creamy, nutty and spicy, she uses turmeric and a good pinch of saffron to add natural colour, and a very secret ingredient for flavour... white poppy seeds! Ground almonds and creamed coconut are also a must.

Cheap chilli chicken

Chicken chasseur

Richard Corrigan makes homemade pasta for his take on chicken chasseur (you can just buy your own tagliatelle if you want) and uses Madeira wine, tarragon, garlic, and thyme for flavour. You’ll need to buy a whole chicken to feed four people.

Chicken biryani

chicken biryaniAnjali Pathak's simple chicken biryani recipe uses madras paste, chicken breast and lots of fresh herbs and spices, mixed with fluffy basmati rice. The chicken soaks up all the flavour, and the sauce keeps everything lovely and moist. You could make a veggie version using peppers and green beans or okra.

Roast chicken with chorizo stuffing

chickenRachel Allen’s super-moist roast chicken comes filled with a flavoursome chorizo stuffing, and is glazed with honey before cooking. Make your stuffing by melting honey with olive oil, then frying alongside onion, garlic, and chorizo. Stir in thyme and breadcrumbs to finish.

Venezuelan chocolate chilli chicken

chickenIf you're a fan of chilli chocolate, you'll be out grabbing ingredients as soon as you read this recipe! A casserole-like dinner that balances bitter dark chocolate with fresh zest and juice from an orange, rich tomatoes, and a zap of chilli.

Chicken satay with peanut sauce

satayThe inspiration behind Gordon Ramsay’s chicken satay came from a trip to Penang, when he stumbled across an amazing satay stall on the side of the road. Use chicken thigh meat and make sure you marinate your meat for at least 12 hours before cooking.

Chicken and sweet potato skewers

The skewers are coated with an orange and honey glaze, and the chicken marinated with thyme, chilli and ginger. Though the recipe calls for a salad accompaniment, you can go with an alternative if you're indoors, like chips or a jacket potato.

Hunter’s chicken

HuntersGarlic, chicken thighs and drumsticks, chopped tomatoes and white wine are the key ingredients of Hunter’s chicken. It’s a selection of chicken joints cooked in an onion and tomato herb sauce. In this recipe, Lawrence Dallaglio adds chestnut mushrooms and fresh parsley.
