Ingredients

  • 100 g Free From Gluten seeded sliced loaf
  • 25 g Parmigiano Reggiano, grated
  • 28 g pack fresh coriander, chopped
  • 2 British chicken breasts, cut into strips
  • 1 egg, beaten
  • 2 tbsp oil for frying
  • 195 g can sweetcorn, drained
  • 1 bunch salad onions, sliced
  • 2 tbsp Thai sweet chilli sauce
  • 3.5 oz Free From Gluten seeded sliced loaf
  • 0.9 oz Parmigiano Reggiano, grated
  • 1 oz pack fresh coriander, chopped
  • 2 British chicken breasts, cut into strips
  • 1 egg, beaten
  • 2 tbsp oil for frying
  • 6.9 oz can sweetcorn, drained
  • 1 bunch salad onions, sliced
  • 2 tbsp Thai sweet chilli sauce
  • 3.5 oz Free From Gluten seeded sliced loaf

Step-by-step

  1. Make breadcrumbs from the seeded loaf and mix with the Parmigiano Reggiano and half the coriander, season. Dip the chicken in the egg and then in the breadcrumb mixture to evenly coat each goujon.
  2. Heat the oil in a frying pan and fry the goujons in batches for 4-5 minutes until golden and cooked throughout, with no pink in the middle.
  3. Meanwhile, mix the sweetcorn, salad onions and remaining coriander with the sweet chilli sauce and serve with the goujons.
