Rice crispy rubble chicken recipe

Chicken, dipped in pimped mayonnaise and spiced breakfast cereal, is finding its way into many a kitchen across the globe, but it’s a guilty pleasure. Not a recipe you would put into words and admit to.

These knobbly, garish goujons are utterly delicious.

Ingredients

  • 100 g crispy rice cereal
  • 0.5 tsp paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp dried thyme
  • 1 garlic clove, crushed
  • 1 squeeze of lemon juice
  • 200 ml mayonnaise
  • 4 skinless, boneless chicken breasts, cut into thick strips
  • 3.5 oz crispy rice cereal
  • 0.5 tsp paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp dried thyme
  • 1 garlic clove, crushed
  • 1 squeeze of lemon juice
  • 7 fl oz mayonnaise
  • 4 skinless, boneless chicken breasts, cut into thick strips
  • 3.5 oz crispy rice cereal
  • 0.5 tsp paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp dried thyme
  • 1 garlic clove, crushed
  • 1 squeeze of lemon juice
  • 0.8 cup mayonnaise
  • 4 skinless, boneless chicken breasts, cut into thick strips

Step-by-step

  1. Preheat the oven to 200°C/gas mark 6 and line a shallow baking sheet with baking parchment.
  2. Put the cereal in a food bag and crush roughly. Now add the paprika, cumin, thyme and salt and mix well. Pour onto a plate.
  3. Mix together the garlic, lemon juice and mayonnaise in a separate bowl.
  4. Coat the chicken strips in a thin layer of the mayonnaise mix. Toss them in the cereal mix and put on the baking sheet one at a time. Bake for 15–20 minutes until golden, turning half way through cooking.
  5. Serve with a dollop of tomato ketchup, recklessness and napkins – and don’t even attempt any healthy side-dish token gestures. Enjoy!
