Granola bars recipe

These healthy bars are packed full of dried fruit, nuts, and seeds. Do not give these to a baby under 12 months (the maple syrup is not safe for them). These bars are delicious without the nuts, so simply omit for a child with a nut allergy.

Ingredients

  • 6 tbsp butter
  • 3 tbsp maple syrup
  • 3 tbsp fruit spread (such as pear or apricot)
  • 2 tbsp pecan halves
  • 4 tbsp mixed seeds such as sunflower, pumpkin or flax
  • 2 tbsp ground almonds
  • 100 g light brown sugar
  • 180 g old-fashioned rolled oats (not cooking oats)
  • 50 g golden raisins
  • 6 tbsp butter

Step-by-step

  1. Preheat the oven to 175°C. Grease an 8-inch square cake pan with a little butter and line it with waxed or parchment paper. Place the butter, maple syrup, fruit spread, and sugar in a saucepan over medium heat.
  2. Heat until the butter has melted and the sugar has dissolved. Stir well to mix.
  3. Bring to a boil and cook for 2 minutes until it has a thick, sticky consistency.
  4. Place the remaining ingredients in a large bowl. Pour in the melted ingredients and mix well. Pour into the prepared cake pan, flatten with a wooden spoon, and bake for 15–20 minutes until golden brown. Remove from the oven and leave to cool. Cut into squares.
  5. Keep in an airtight container for 3–4 days, or freeze extra portions the day they are made for up to 1 month. If freezing, defrost thoroughly, let come to room temperature, and serve.
