Mediterranean vegetable purée recipe

Food for babies aged 6-9 months from Annabel Karmel. Makes five portions.

Ingredients

  • 100 g red onion, peeled and chopped
  • 150 g courgette, diced
  • 100 g yellow pepper, deseeded and diced
  • 175 g aubergine, diced
  • 1 clove garlic, crushed
  • 1 x 400g can chopped tomatoes
  • 200 ml unsalted vegetable stock
  • 1 tbsp tomato purée
  • 1 tbsp chopped fresh basil
  • 30 g cheddar cheese, grated
  • 3.5 oz red onion, peeled and chopped
  • 5.3 oz courgette, diced
  • 3.5 oz yellow pepper, deseeded and diced
  • 6.2 oz aubergine, diced
  • 1 clove garlic, crushed
  • 1 x 400g can chopped tomatoes
  • 7 fl oz unsalted vegetable stock
  • 1 tbsp tomato purée
  • 1 tbsp chopped fresh basil
  • 1.1 oz cheddar cheese, grated
  • 3.5 oz red onion, peeled and chopped
  • 5.3 oz courgette, diced
  • 3.5 oz yellow pepper, deseeded and diced
  • 6.2 oz aubergine, diced
  • 1 clove garlic, crushed
  • 1 x 400g can chopped tomatoes
  • 0.8 cup unsalted vegetable stock
  • 1 tbsp tomato purée
  • 1 tbsp chopped fresh basil
  • 1.1 oz cheddar cheese, grated

Step-by-step

  1. Put all of the ingredients except the basil and cheese into a saucepan.
  2. Cover with a lid, bring up to the boil, then simmer for 15 minutes until all the vegetables are soft.
  3. Add the basil then blend everything until smooth. Stir in the cheese until it is all melted.
