Cucumber, courgette and tomato blended into a seasoned soup to be served cold.

Ingredients

  • 300 g cucumber
  • 2 courgettes/zucchini
  • 2 ripe tomatoes
  • 6 sprigs coriander/cilantro
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1 lime, juice only
  • 2 tsp sesame oil
  • 0.5 tsp fine salt
  • 10.6 oz cucumber

Step-by-step

  1. Peel the cucumber. Slice about 50g finely and set these cucumber slices aside for the garnish. Chop the remainder of the cucumber finely.
  2. Wash the courgettes and the tomatoes and chop finely.
  3. Blend all of the main ingredients together to obtain a smooth purée. Taste and adjust seasoning if necessary.
  4. Serve the soup in shallow bowls and garnish with the reserved cucumber slices, the caraway seeds and a sprinkling of turmeric.
