Chocolate ganache recipe

Juliet Sear shows us how to make a chocolate ganache - perfect for topping cupcakes.

Top tip: take care not to over-heat the chocolate, as it may burn. But the butter and cream in the mix should keep it stable.

Ingredients

  • 250 g 70% dark chocolate chips
  • 125 g unsalted butter
  • 80 g double cream
  • 8.8 oz 70% dark chocolate chips
  • 4.4 oz unsalted butter
  • 2.8 oz double cream
  • 8.8 oz 70% dark chocolate chips
  • 4.4 oz unsalted butter
  • 2.8 oz double cream

Step-by-step

  1. In a large pyrex bowl, combine the chocolate chips, butter and cream.
  2. Heat the mixture a minute at a time in the microwave, stirring between each time until you have a smooth consistency.
  3. If using to decorate cupcakes, make sure you only fill your cupcake cases up half way with batter - you need space for the chocolate (see video).
  4. Pour the ganache onto the cupcake, aiming for the middle, until full. Tap sharply on your worktop surface to smooth it all out. Allow to set at room temperature before eating.
