Peppered pineapple recipe

This recipe is healthy, fresh and cost effective. I recently purchased a pineapple from the market for £1.00 and as this will produce four portions, it makes it an achievable and cost effective dessert.

Ingredients
  • 25 g (0.9oz) butter, softened
  • 1 whole fresh pineapple skinned and divided into equal round slices approx 1cm thick
  • 1 tsp fresh ground black pepper
  • 1 tsp caster sugar

Step-by-step

  1. Remove the skin from the pineapple and slice the flesh into circles (approx 1cm thick).
  2. Dab each circle with a little melted butter then evenly sprinkle over the sugar and black pepper.
  3. Place into the oven at 180C or alternatively at the side of the BBQ to cook. It won't take longer than 10 minutes.
  4. When hot and soft, serve. This recipe works well with a dollop of natural thick yoghurt or ice cream.
