This recipe is healthy, fresh and cost effective. I recently purchased a pineapple from the market for £1.00 and as this will produce four portions, it makes it an achievable and cost effective dessert.

Ingredients
- 25 g (0.9oz) butter, softened
- 1 whole fresh pineapple skinned and divided into equal round slices approx 1cm thick
- 1 tsp fresh ground black pepper
- 1 tsp caster sugar
Step-by-step
- Remove the skin from the pineapple and slice the flesh into circles (approx 1cm thick).
- Dab each circle with a little melted butter then evenly sprinkle over the sugar and black pepper.
- Place into the oven at 180C or alternatively at the side of the BBQ to cook. It won't take longer than 10 minutes.
- When hot and soft, serve. This recipe works well with a dollop of natural thick yoghurt or ice cream.
