Mulled wine recipe

A cheeky little number, ideal for getting into the festive spirit. Mark made this recipe with Spanish citrus fruits - they're some of the best around, so be sure to use them if you can find them.

Ingredients

  • 1 x 18.7cl bottle of full bodied Spanish red wine (Rioja is ideal)
  • 1 Navel orange
  • 1 lemon, sliced
  • 1 cinnamon stick
  • 4 tbsp brown sugar
  • 1 mulled wine sachet, OR 1 bayleaf and a grating of fresh nutmeg
  • 150 ml water`

Step-by-step

  1. Place the wine, water, sugar, cinnamon stick, spice sachet (or bay leaf and nutmeg), sliced lemons and a few slices of Navel orange into a large saucepan.
  2. Heat to just below boiling point and hold this temperature for 10 minutes, stirring occasionally.
  3. Remove the sachet (or bay leaf) and strain into heatproof glasses. Serve with Navel orange slices and a few segments of tangerine, clementine or satsuma - whichever tickles your fancy.
