Raw strawberry tarts recipe

A raw, vegan tart made from ground almonds, cashews, coconut oil, dates, and both fresh and dried strawberries. Give it a go - we promise you won't be disappointed!

Ingredients
For the base
  • 6 dates and 3-4 tbsp of water
  • 60 g (2.1oz) ground almonds
  • 60 g (2.1oz) ground cashews
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 pinch of salt
For the cream
  • 1 cup of cashews soaked for at least 30 mins
  • 140 ml (4.9fl oz) melted coconut oil
  • 1 tbsp vanilla extract
  • 2 tbsp agave
  • 3 tbsp water
For the strawberry syrup
  • 110 g (3.9oz) fresh strawberries
  • 140 ml (4.9fl oz) agave
  • 2 tbsp dried strawberries
For the topping
  • 1 cup strawberries

Step-by-step

  1. To make the base: place the dates and water into the food processer and process until you have a date paste.
  2. Place all ingredients (including the date paste) into a food processor and process until well combined.
  3. Press the mixture into the tart cases.
  4. Place in the freezer to firm up.
  5. To make the cream: blend all ingredients together until smooth and creamy.
  6. To make the syrup: blend all ingredients together until you get the consistency you are after. More dried fruit makes the jam thicker.
