A raw, vegan tart made from ground almonds, cashews, coconut oil, dates, and both fresh and dried strawberries. Give it a go - we promise you won't be disappointed!

Ingredients
- 6 dates and 3-4 tbsp of water
- 60 g (2.1oz) ground almonds
- 60 g (2.1oz) ground cashews
- 1 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1 pinch of salt
- 1 cup of cashews soaked for at least 30 mins
- 140 ml (4.9fl oz) melted coconut oil
- 1 tbsp vanilla extract
- 2 tbsp agave
- 3 tbsp water
- 110 g (3.9oz) fresh strawberries
- 140 ml (4.9fl oz) agave
- 2 tbsp dried strawberries
- 1 cup strawberries
Step-by-step
- To make the base: place the dates and water into the food processer and process until you have a date paste.
- Place all ingredients (including the date paste) into a food processor and process until well combined.
- Press the mixture into the tart cases.
- Place in the freezer to firm up.
- To make the cream: blend all ingredients together until smooth and creamy.
- To make the syrup: blend all ingredients together until you get the consistency you are after. More dried fruit makes the jam thicker.
