Italian fig and chocolate ice cream recipe

An incredibly easy ice-cream that has a wonderful spicy-rich taste and texture that comes from the soft-dried figs. Made without egg custard but simply using the figs, milk, cream, a little sugar plus a lovely bar of dark chocolate. Try scoops of the ice-cream topped with warm melted chocolate and roasted hazelnuts.

Ingredients

  • 1 x 45g bar dark chocolate
  • 250 g soft-dried figs
  • 200 ml milk, chilled
  • 3 tbsp caster sugar
  • 250 ml double cream, well-chilled

  • 7 fl oz milk, chilled
  • 3 tbsp caster sugar
  • 8.8 fl oz double cream, well-chilled
  • 1 x 45g bar dark chocolate
  • 8.8 oz soft-dried figs
  • 0.8 cup milk, chilled
  • 3 tbsp caster sugar
  • 1.1 cups double cream, well-chilled

Step-by-step

  1. Break up the chocolate, put into the bowl of a food processor and chop as finely as possible. Tip out into a bowl and set aside.
  2. Put the figs into the processor bowl and chop roughly. Add the milk and sugar and process to make a smooth purée.
  3. Whip the cream until soft peaks form then fold in the chopped chocolate and the fig purée. Turn the mixture into the ice-cream machine, if you have one, and churn until frozen. You can also freeze the mixture into a freezer container and freeze until firm. Best eaten within a few days.
