Ingredients

  • 1 perfectly ripe avocado
  • 1 lime, juice only
  • 100 ml (preferably light / reduced fat) coconut milk
  • 2 tbsp chopped fresh mint leaves
  • 3 tbsp agave syrup (or use honey)
  • 1 tsp good quality vanilla extract
  • 200 ml semi-skimmed milk

  • 0.4 cup (preferably light / reduced fat) coconut milk
  • 2 tbsp chopped fresh mint leaves
  • 3 tbsp agave syrup (or use honey)
  • 1 tsp good quality vanilla extract
  • 0.8 cup semi-skimmed milk

Step-by-step

  1. Cut the avocado in half, lengthways, remove the stone with a teaspoon and scoop the soft flesh into a blender / smoothie maker. Add everything else and whizz up!
