Whenever I have people round I always forget people will expect a pudding and this pudding has got me out of jail so many times...and it's a bit exotic as well... And it's healthy. Basically a great pudding!

Ingredients
  • 6 tbsp Honey
  • 100 g (3.5oz) Bulgar wheat
  • 1 tbsp Orange blossom water
  • 4 Oranges
  • 100 g (3.5oz) Shelled pistachios

Step-by-step

  1. Pour 150ml of boiling water into a bowl and stir in 3 tablespoons of honey and 1 tablespoon of orange blossom
  2. Pour the honey water over the bulgar, cover with a lid and simmer gently for about 10 minutes allowing the liquid to be absorbed
  3. Slice the oranges into segments and place into a bowl. Squeeze any remaining juice from the orange onto them
  4. Roughly chop the pistachios and mix with the rest of the honey and 1 tablespoons of water
  5. Place an 8cm wider pastry ring onto a plate, spoon a layer of the cooled bulgar into it and place the nut mixture on top
  6. Carefully remove the ring and decorate the plate with the orange segments
  7. Repeat the last 2 steps for each potion
