Caramelised veggies and sausages recipe

Buy only the best-quality sausages you can find, which have at least a 90 per cent meat content and that are low in salt. This dish combines the best flavours, all caramelised together. Delicious!

Ingredients

  • 4 Large sweet potatoes
  • 450 g Pork sausages
  • 1 tbsp Olive oil
  • 2 Onions, peeled and sliced
  • 1 Garlic clove, peeled and sliced
  • 1 tsp Fennel seeds
  • 100 g Fine green beans, trimmed
  • 100 g Cherry tomatoes
  • 100 g Grapes
  • 2 tbsp Apple cider vinegar

Step-by-step

  1. Preheat the oven to 200°C/400°F/Gas mark 6.
  2. Wash the unpeeled sweet potatoes and pat them dry. Arrange them on a baking tray and pierce each one several times with a fork.
  3. At the same time, prick all the sausages several times with a fork and arrange them on a wire rack set over a baking tray. Pop them in the oven with the sweet potatoes for 30-45 minutes until tender. Meanwhile, heat the olive oil in a large frying pan set over a medium heat. Add the onions and cook, stirring occasionally, for about 6 minutes until starting to brown.
  4. Add the garlic, fennel seeds, green beans, tomatoes and grapes and cook for another 6-8 minutes, stirring often, until the grapes and tomatoes are starting to soften and caramelise. Pour over the vinegar and swirl it around the pan. Turn off the heat and wait for the sausages to finish cooking.
  5. Finally, when the sausages and sweet potatoes are done, transfer the sausages to the onion-and-grape mixture, stir and put over a medium heat for 2-3 minutes until everything is all sticky and delicious.
  6. Then, place a baked sweet potato on to each plate and cut it open. To serve, pile the sausage mixture next to the sweet potato.
