Crispy vegetable fritters recipe

Looking for a new vegetarian dish to add to your repertoire? These gorgeously golden fritters are just the thing: quick, easy, cheap and packed with flavour. You can also throw in pretty much whatever veg you have, from celeriac to onions and potatoes, so it’s a brilliant recipe to have on hand when you have ingredients that need using up. You can experiment with different herbs and spices, too.

Serve with a dollop of caramelised onion marmalade or jam to add a rich sweetness, with a leafy green salad on the side.

Step-by-step

  1. Grate the courgette (zucchini) onto a clean tea towel (dish towel), season with salt and set aside.
  2. Whisk together the egg, baking powder and flour in a large bowl and season with black pepper.
  3. Squeeze the excess water from the courgette (zucchini) over the sink. Combine with the carrot, coriander (cilantro) and garlic in a bowl and add the egg batter.
  4. Heat enough oil to just cover the bottom of a large frying pan (skillet) over medium-high heat. When the oil just shimmers, drop in heaped tablespoons of the fritter mixture, flattening each with the back of the spoon to make fritters. Cook in 3-4 batches. Fry each fritter for 2-3 mins or until golden brown on each side.
  5. Set the fritters to drain on a plate lined with kitchen paper.
  6. Spoon the caramelised onion marmalade (caramelized onion jam) over the warm fritters to serve.
