One-pot tomato pasta recipe

A quick and easy pasta recipe, ideal for midweek dinners. Plus you probably have all of the ingredients already in your store cupboard.

Step-by-step

  1. Heat 2 teaspoons of oil in a medium saucepan over a medium heat and fry the breadcrumbs for 3-4 mins, stirring often, until just turning golden brown.
  2. Add half the crushed garlic, along with a pinch of thyme, then cook for another 1 minute until toasted and fragrant. Tip into a bowl and set aside.
  3. Add the remaining 2 teaspoons of oil to the pan and cook the onion, over a medium heat for 5-6 minutes until softened and slightly browning.
  4. Add the remaining garlic and ½ a teaspoon of thyme, and cook for 1 minute.
  5. Add the remaining pinch of thyme, the chopped tomatoes and vinegar, and season. Stir well and bring to a simmer.
  6. Break the spaghetti in half and add to the pan with 500ml/17fl oz boiling water. Cook over a medium heat for 10-12 minutes until the pasta is al dente, adding a splash more water if it starts to stick. 
  7. Divide between two bowls and scatter over the garlicky breadcrumbs to serve.
