Buffalo wings recipe

Finger food doesn’t get better than a big plate of spicy, crisp chicken wings with a blue cheese dip and celery sticks.

Step-by-step

  1. Remove the wing tips from the wings. (You can freeze them and use for a stock). Mix all the rub ingredients together. With your hands, massage the rub mixture all over the wings. Put onto a large plate (you don’t want them piled up, but to sit individually), cover and leave in the fridge overnight.
  2. To make the sauce, gently melt the butter with the honey in a small saucepan. Remove from the heat and whisk in the pepper sauce until everything is combined.
  3. Heat the oven to 180°C/160°C fan/350°F/gas mark 4. Prepare a baking sheet lined with oiled foil.
  4. Dip each wing into the sauce and place on the tray in a single layer. Bake for 30 minutes.
  5. Meanwhile, whizz all the ingredients for the blue cheese dip in a blender.
  6. Now brush the wings with the sauce again. Turn up the oven to 200°C/180°C fan/400°F/gas mark 6, and bake for a further 15 minutes or until browned and crisp.
  7. Serve the wings with the blue cheese dip and celery sticks.
