Barbecued okra recipe

Once you try okra on the barbecue, you'll make it again and again.

Ingredients

For the all-purpose seasoning
  • 6 parts sea salt (we like Maldon)
  • 2 parts black pepper
  • 1 part thyme, rosemary, crushed fennel seeds, chilli flakes (optional)

  • 0.5 part onion powder

For the okra
  • 150 g okra
  • 1 tbsp olive oil
  • 5.3 oz okra
  • 1 tbsp olive oil
  • 5.3 oz okra

Step-by-step

  1. Mix ingredients for all-purpose seasoning together.
  2. Add okra to a bowl and toss to coat with the olive oil and all-purpose seasoning.
  3. Using a barbecue, or large pan on a high heat, cook the okra, tossing/turning frequently for approx 5 minutes until soft and slightly charred.
  4. Serve as a starter or a side with dips.
