Bulgar wheat is an underrated grain and this easy dish really shows it off. It's mixed with spring onions, red pepper and seasoning.

Step-by-step

  1. Start by cooking the bulgur wheat in salted boiling water for about 12 minutes until soft, then drain.
  2. Meanwhile, pan-fry the spring onions and pepper in a generous glug of olive oil and a pinch each of salt and pepper for about 5 minutes.
  3. Add the bulgur wheat and mix everything together. Season to taste, then serve.
