Horseradish and sugar crusted beef recipe

Simple beyond belief, but the combination of fiery horseradish and sweet soft brown sugar is a hit.

If you can, cook the meat directly on the oven shelf with a roasting tin positioned underneath to catch any of the juices. It gives a fantastic all-round colour and flavour to the joint.

Ingredients

  • 3 tbsp grated hot horseradish from a jar
  • 2 tbsp soft brown sugar
  • 1 kg piece of topside beef

Step-by-step

  1. Preheat the oven to gas 7/220°C/200°C fan. Combine the horseradish and sugar in a bowl and then slather all over the beef. Season with pepper and then roast for 20 minutes.
  2. Reduce the oven to gas 5/190°C/170°C fan and then roast for 25 minutes per 450g plus 25 minutes. Allow to stand for 20 minutes or so before carving.
