Apple pancakes recipe

Apple pancakes recipe

My girls just love helping me to make these little babies, not only because they get to make a mess in the kitchen with mum, but also because they know how utterly delicious they are!

By adding sweet apple to the batter, there is no need for any added sugar.

Step-by-step

  1. Sift the flour and baking powder into a large bowl and make a well in the middle. Pour the almond milk and vanilla extract into a jug with the egg and whisk together.
  2. Then pour into the flour, whisking continuously until you have a smooth batter. Tip in the grated apple and stir to combine. Heat a non-stick pan on a medium heat and brush it with some of the melted butter.
  3. Then pour a ladleful of the batter onto the pan and cook till bubbles form, before turning it over and cooking on the other side. Serve with a light sprinkling of icing sugar to make them pretty!
