Sweet potato, fig and feta salad recipe

Raw sweet potatoes, juicy ripe figs and salty feta combine perfectly in this fresh and vibrant salad, making it not only tasty but also healthy and nutritious.
Tip: You can replace the figs for juicy plums or greengages. Large grapes are also good.
Ingredients
- 1 lime, juice only
- 4 tbsp extra virgin olive oil
- 1 tbsp black mustard seeds
- 1 small punnet mustard and cress
- 200 g feta cheese, cut into cubes
- 1 small bunch flat parsley
- 6 figs, each cut into 6 wedges
- 1 medium-sized raw sweet potato, peeled
- 1 lime, juice only

Step-by-step
- Cut the sweet potato into thin little strips (like matchsticks) and place in a large bowl (if you have a mandolin, use the julienne attachment).
- Add the figs, parsley, feta cheese, mustard and cress, mustard seeds and olive oil and mix well.
- Add the lime juice, season with black pepper and mix again.
