Ingredients

  • 8 sea bass fillets
  • 100 ml white or gold tequila
  • 120 ml Cointreau
  • 150 ml fresh lime juice
  • 1 tbsp salt
  • 3 garlic cloves, crushed
  • 3 tsp vegetable oil
  • 1 pinch freshly ground black pepper

  • 4.2 fl oz Cointreau
  • 5.3 fl oz fresh lime juice
  • 1 tbsp salt
  • 3 garlic cloves, crushed
  • 3 tsp vegetable oil

  • 8 sea bass fillets
  • 0.4 cup white or gold tequila
  • 0.5 cup Cointreau
  • 0.6 cup fresh lime juice
  • 1 tbsp salt
  • 3 garlic cloves, crushed
  • 3 tsp vegetable oil
  • 1 pinch freshly ground black pepper

Step-by-step

  1. Place the fish in a zip-lock bag. Combine the tequila, Cointreau, lime juice, salt, garlic and 2 teaspoons of oil and pour over the fish.
  2. Marinate for 30 minutes at room temperature turning occasionally.
  3. Heat the grill to very hot. Remove the sea bass from its marinade and pat dry.
  4. Brush lightly with 1 teaspoon of oil and grind some pepper over the surface of the fish. Grill for 3 to 4 minutes per side.
