Quick lamb kebabs recipe

These kebabs are effortless but utterly satisfying. You can serve them in wraps, with chips or on their own. However you choose, they will be delicious.

Ingredients

For the kebabs
  • 500 g minced (ground) lamb
  • 1 fat green chilli, finely chopped
  • 1 onion, finely chopped
  • 1 lemon, juice only
  • 1 clove garlic, crushed
  • 0.5 tsp salt
  • 2 tbsp ground cumin
  • 1 small handful fresh coriander/cilantro, leaves finely chopped
  • 1 red onion, halved and finely sliced, to serve
  • 4 tortilla wraps, to serve

For the mint yogurt
  • 100 ml Greek yogurt
  • 2 tbsp mint jelly
  • 3.5 fl oz Greek yogurt
  • 2 tbsp mint jelly
  • 0.4 cup Greek yogurt
  • 2 tbsp mint jelly

Step-by-step

  1. Preheat the grill/broiler to high and line a grill pan with foil.
  2. Put the lamb, chopped chilli, onion, lemon juice, garlic, salt, ground cumin and 2 tablespoons of the fresh coriander in a large bowl and use your hands to mix until everything is really well combined.
  3. Divide the mixture into 8 equal-sized balls, then form each ball into a sausage shape, each around 6cm/2.5in long.
  4. Lay the kofta on the prepared grill pan and grill/broil for 6-8 minutes, turning regularly, until golden and cooked through.
  5. While the kofta are cooking, put the yogurt and mint jelly in a bowl and stir to combine.
  6. Once cooked, serve the kofta in the middle of the table, passing the wraps, mint yogurt and sliced red onions around for everyone to assemble their own kebabs.
