Ranchers' eggs, as the name of this flavor-packed Mexican dish roughly translates, are perfect for a weekend breakfast or brunch. For this recipe, simply cook tinned black beans with a little water, cumin, and smoked paprika, before adding fresh cherry tomatoes and leaving to simmer for five minutes until softened. Spread the mixture over warm flour tortillas, add creamy avocado slices, fresh lime, and oozy fried eggs, then finish with salty, crumbled feta and hot sauce.
