This one's a cheesecake with an unexpected twist – the base is made with crushed Oreo biscuits. It may be vegan, but the filling still has a smooth, creamy texture, made with plant-based cream cheese, tofu, melted vegan white chocolate and chocolate chips. A swirl of raspberry jam and a handful of fresh raspberries are (literally) the icing on top!
