Here's a beef pie recipe with a difference. Beef is slow-cooked in stock and ale (you do need to marinate the beef overnight), before being transferred to a pie dish. Slices of Cheddar are layered over the beef, which is then topped with a sour cream pastry lid. As the pie cooks, the cheese melts into the pastry, adding an extra dimension of both flavour and texture.
