This crunchy, creamy, vibrant salad is pretty filling, so you won't need an extra side dish to go with it. For 4 people, slice up 2 avocados, 4 boiled eggs, a cucumber and 5oz (150g) blanched broccoli. Drizzle over a buttermilk dressing made with 5fl oz (150ml) buttermilk, 4 tbsp thick yoghurt, 2 crushed garlic cloves and a squeeze of lemon. Season well; eggs and avocado need a good grinding of sea salt to bring out their flavour.
