In this Mediterranean-style recipe, spatchcocked chicken is marinated in lemon, garlic, and herbs, roasted, then served with a crisp salad. The chicken cooks in around 40 minutes, but it's important to baste it regularly to ensure moist and flavorsome results. Here's a clever tip: try rubbing salt and baking powder into the skin prior to cooking, and leave the chicken to rest for at least 20 minutes to make it crispier.
