Adding sparkling water to your batter will make it light and crisp, just like a Japanese tempura batter. The bubbles create pockets of air which expand with the heat, giving a lighter texture. You could even use a fizzy drink like ginger beer in place of plain sparkling water to add an extra dimension – the flavors would also work beautifully alongside maple syrup, lemon or cinnamon. Delicious!
