Everyone loves a red velvet cake, and how cute are these cupcakes? The light chocolate sponge is topped with cream cheese frosting. When making the frosting, use a full fat cream cheese and have the butter soft at room temperature, as lower fat cream cheese won't whisk properly and will slide off. Decorate on the day and leave in the refrigerator to firm up before transporting.
