What we all love in a baked potato is the crisp skin and the soft, fluffy center. To produce the perfect potato, pierce the skin all over with a fork, rub with oil and sea salt, then bake in a hot oven for around 60-90 minutes (larger potatoes may need longer). You can speed up the process by microwaving them on high to begin with (three average-sized potatoes will take eight minutes), then put them in the oven for 45 minutes to crisp up.
