We've another top-notch competition on lovefood.com, how would you like to winner dinner and a night in a hotel? Course you would, read on.
Our friends at Macdonald hotels have 48 charming hotel locations in the UK, each with its own unique and lavish facilities ranging from high-end spas to challenging golf courses.
However, what we like is their guarantee of a food offering that is unparalleled in the UK hotel industry in terms of seasonality, sustainability, flavour and provenance.
The firm prides itself on working with a small group of suppliers that are mostly UK-based that use ethical or traditional practices; their restaurant chefs work from raw ingredients, do not use short-cuts (they never use pre-cooked or frozen produce) and plan menus by season to ensure food is bursting with nutrients and flavour.
Wow, that’s different
Indeed, some examples of Macdonald’s enlightened food policy include: all chicken used in catering and the group’s restaurants is free-range; the pork is outdoor-reared, free-range and British; the lamb and beef is Scottish and grass-fed; eggs are free-range; milk arrives daily from a family-owned Scottish creamery; the cured and smoked fish used by Macdonald chefs is smoked in traditional 150 year-old red-brick kilns.
Sounds great, but what about the chefs?
Glad you asked that. Macdonald Hotels also employ the very best in fine dining talent. John Paul Maclachlan, Executive Chef at Macdonald’s Marine Hotel in North Berwick, learnt his trade with Gordon Ramsay and Raymond Blanc, and Aidan Byrne, who established the British Grill at the group’s Craxton Wood hotel in Chester, remains the youngest UK chef to have won a Michelin Star at the age of 22.
Have they won awards?
They sure have. The hotel group has been awarded over 40 AA Rosettes for its restaurants, positioning it second in the UK for the hotel group with the most Rosettes and demonstrating its commitment to top-quality food. Macdonald hotels are justly proud of their Scottish Steak Clubs, which use only the finest Scotch Beef and can be found in four of the group’s hotels (three of these also have Josper Grills – an innovative charcoal-fired grill that is relatively new to the UK).
As food writer and investigative journalist Joanna Blythman says ‘Macdonald Hotels promise to serve you “good honest, simple food from great ingredients” and it really does take this mission to heart.’
Sounds like they know their onions, how do I enter?
Simple: if you were having the Lovefood editorial team round for dinner, what recipe from our database would you cook for us and why?
Dear lovefood, I would cook... [link to lovefood.com recipe] … for you because…

Dear lovefood,
I would cook:
http://www.lovefood.com/guide/recipes/14263/sophie-wrights-grilled-pear-endive-and-crottin-de-chavignol-toasts
as a starter, the combination of the cheese, walnuts and the pears is a classic combination, fresh and light ingrediants make this an ideal start to a dinner
I would then cook as a main:
http://www.lovefood.com/guide/recipes/14475/jos-pizarro-red-mullet-with-sliced-potatoes-and-black-olives
I think a simple fish dish, pan fried served rosemary and garlic potatoes is a winner for any dinner party. A tasty dish which is simple to prepare but a real show stopper!
for desert I would cook:
http://www.lovefood.com/guide/recipes/13061/daniel-galmiches-lemon-tart-with-lime-zest
I think any desert should not only suit those with a sweet tooth, but also those who wish for something fresh to clean their pallet. A perfect pudding following fish with zesty taste, this would be a real winner.
I have chosen recipes that use fresh ingrediants, but are also light to suit the season. I hope you like my selection x

Hello LoveFood
So many fabulous recipies, so difficult to choose! I've browsed through a number of possibles but think I would go for this classic using one of my favourite fish - cod
http://www.lovefood.com/guide/recipes/15270/roasted-cod-with-pepperonata-and-basil-recipe
Cod can be quite a bland fish but the pepperonata coupled with my favourite aromatic herb, basil, would soon liven this dish up and 'tickle any palate'!

I would cook http://www.lovefood.com/guide/recipes/15270/roasted-cod-with-pepperonata-and-basil-recipe.
I find it quite easy to cook fish because it's quick and I love that you never feel over-full after a good fish dish. I'd be tempted to try an alternative fish like hake or pollock, the latter particularly due to the threat to our Cod stocks.
I'd follow this with a Lemon Posset and ginger biscuits and the fish would be accompanied by a crisp chilled Pinot Grigio.
What a fab database of recipes you have.

Dear lovefood, I would cook you a meal to satisfy and one to remember. No one leaves my dining room still hungry.
Somtimes it is hard to just jump into a heavy meal so for starters I would prepare the http://www.lovefood.com/guide/recipes/15197/halloumi-fig-and-pomegranate-salad-recipe. A salad as a starter is not only light but a meal with one your fives a day. All of the rocket and mint leaves will be freshly picked with the stronger slightly bitter taste balanced out by the sweet tangy pomegranates. The crunch will be balanced out with a firmer texture of grilled halloumi which will also bring the salad alive with the smoky subtle cheesy flavour. All will be very appetising, preparing you for your main dish.
For mains I will prepare the http://www.lovefood.com/guide/recipes/14814/whole-stuffed-fish with the seabass freshly bought and fillet that day to get the full freshness. After the cooling mint salad this spicy dish will immediately warm you up. Tender, succulent fish balanced out with a crunchy inside of leeks, green beans and other fresh vegetables. It will be a real kick of heat from the different spices in the stuffing creating a real depth of flavour cooled by the more creamy curried fillet of fish.
A nice side to add inside of rice would be http://www.lovefood.com/guide/recipes/11310/jean-christophe-novellis-baby-new-potatoes. A minted potato using the highest quality to produce a fluffy interior to balance the heat further and lighter than rice. But the mustard seeds will add a little kick just to keep the heat going and all very well flavoured and seasoned with garlic, thyme and other fresh herbs.
After all that spices you do need something to relieve the stomach completely and what could be a better dessert than the http://www.lovefood.com/guide/recipes/15244/rooibos-tea-custard-with-caramelised-apple-recipe. A creamy dessert that will not only satisfy the sweet tooth but with real health benefits from the rooibos tea that has anti-spasmodic properties that will help relieve the stomach from the heavy spice. They also say dairy helps soothe the spice lingering on your tongue. It would be a light dessert without the carbs and instead apples to make it more appetising after a heavy meal. All very creamy, indulgent and yet a good balance at the same time.
I hope this meal will be one to remember and I shall be looking to having you over for dinner. All the deliciousness will start at 7:30pm but feel free to pop by earlier for a chat, some appetisers and drinks.
All the best,
Wendy Lam

Dear lovefood, I would cook the spicy stuffed sea bass http://www.lovefood.com/guide/recipes/14814/whole-stuffed-fish followed by honey roast pears http://www.lovefood.com/guide/recipes/15239/honeyroast-pears-with-orange-blossom-and-yoghurt-recipe for you for a really healthy, tasty meal. You can't beat sea bass for a succulent fish and the spicy stuffing gives the dish a new twist. The honey roast pears provide a combination of flavour and sweetness. A glass of white wine as an aperitif or desert wine to follow the pears! Healthy and very enjoyable.

Dear Lovefood, I would cook http://www.lovefood.com/guide/recipes/15029/english-muffins-recipe for you because there would be nothing quite like home-made fresh English muffins with some of that kiln-smoked salmon, some softly poached free range eggs, lashings of creamy hollandaise and a twist of black pepper. Bliss! And who says you can't indulge in breakfast at dinnertime? :)

Dear lovefood
I would cook http://www.lovefood.com/guide/recipes/15230/roast-rack-of-lamb-with-marmalade-crumb-topping for you because I can use the very best local ingredients: I could show off the excellent fresh Alresford watercress from the beds round the corner, English lamb from the local butcher and my own marmalade. I couldn't rival the cullinary skills of Macdonald's chefs, but as it's an easy recipe I could be a good host and relax and enjoy eating it with you.

Hola mi amigos at lovefood,
I would cook http://www.lovefood.com/guide/recipes/12714/john-gregorysmiths-mexican-chicken for you simply because authentic Mexican food is amazing and doesn't get enough press here in the UK. Of course we would start with loads of fresh guacamole, salsa and corn tortilla crisps and to drink we would have your choice of either my favourite lager, Negra Modelo, or a large pitcher full of homemade Margarita's made with the most authentic tequilla I know, Cazadores Reposado.
Gracias!

Dear Love Food,
Well, unless I'm missing something here, I have no idea how many of you will be dining with me, or if it will be dinner at lunch or dinner at tea time, as per your recent debate. Are you veggies (I suspect not) or food intolerants? Hmm, tricky to entertain someone I don't know, never mind and entire table full of you. So this is what you might expect to enjoy:
http://www.lovefood.com/guide/recipes/10803/melton-mowbray-style-pork-pie-, because I live in lovely Leicestershire. With that you'll get a goodly chunk of Stilton and some Farmhouse Red Leicester. I'll also provide a hearty selection of salads (but nothing with cold pasta) and some assorted tastyhome-baked breads. Then my own baked American Cheesecake and some fresh fruit jellies with my own home-grown fruits. And planty of wine to go with it. I hope you'll enjoy it; I know there'll be something for everyone.
Best Wishes,
Dianthus

Dear LoveFood
I would cook http://www.lovefood.com/guide/recipes/14846/slowbraised-lamb-with-sweet-potato-mash-and-root-vegetables-recipe so that it would cook slowly in my slow cooker and it would give me the time to talk to you about all the interesting topics you bring to our attention. Also with the weather being so wintery at present it would be a hearty meal to keep us warm. Most of the vegetables would come out of our garden but we have not managed to grow sweet potatoes yet!
Best wishes

This I would follow with http://www.lovefood.com/guide/recipes/14626/fillet-of-beef as you don't forget our favourites and the photo inspires us to think about artful presentation too. I would cook you something called Ghorrmeh Sasi which is a traditional Persian dish, with lamb, herbs and dried limes (that description doesn't do it justice, it's divine!). I would use wild duck though as an extra treat which I would roast it in the oven then take the breast off the bone. I would serve it with a wild garlic mash and whatever vegetable happened to be ready and perfect for it from the garden that day. As a final addition I would sprinkle some toasted beach nuts around as this is something that you may not have had and would love! It would be a heavenly autumn treat with the very best and freshest ingredients.
And being the autumn I would have to give you a wild fungi starter and a pudding with apples or pears and wild hazelnuts. You would go home happy!

The simplest meals are always the best. I would use our fabulous local Welsh Black Beef fillet, and serve it with Pembrokeshire New Potatoes (far superior to the much feted Jersey Royals in my opinion), and sauteed leeks. And with me for company, you'd have a true taste of Wales!
