  • 175 g cashews (soaked in water for at least 4 hours then drained)
  • 1 ripe mango
  • 30 g fresh coriander
  • 1 lemon juiced
  • 0.2 tsp cayenne pepper
  • 1 kg new potatoes
  • 8 g flaked almonds
  • 1.5 tbsp tamari
  • 0.5 tsp cinnamon
  • 180 ml water
  • 5 tbsp desiccated coconut
  • 80 g raisins
  • 1.5 tbsp curry powder
  • 0.5 tbsp garam masala
  • 1 salt and pepper to taste
  • 6.2 oz cashews (soaked in water for at least 4 hours then drained)

Step-by-step

  1. Cut the potatoes into halves or quarters (depending on their size), then place them all in a pan of cold water with a pinch of salt. Bring to the boil and simmer for 18-20 minutes until cooked through, then drain and leave to cool.
  2. Peel and roughly chop the mango and roughly chop the coriander.
  3. Place the coriander, mango, flaked almonds, raisins and two tablespoons of desiccated coconut with the potatoes in a large salad bowl.
  4. In a high-speed blender, blend the cashews, lemon juice, spices, water, tamari, salt and pepper, and the rest of the coconut, until smooth.
  5. Stir the sauce through the potatoes before serving.
