Bill tracked down one of the country's rare herd of Buffalo to get the best quality buffalo meat for this delicious and simple redang curry. Perfect served with rice and steamed greens.

Ingredients
- 2 Red onions, roughly chopped
- 5 Cloves garlic, peeled
- 2 tbsp Grated ginger
- 6 Large red chillies, seeds removed, roughly chopped
- 3 Stalks lemongrass, white part only, roughly chopped
- 3 tbsp Light-flavoured oil
- 2 tbsp Ground cumin
- 2 tbsp Ground coriander
- 2 tsp Turmeric
- 2 kg (4.4lbs) Buffalo steak, diced
- 400 ml (14.1fl oz) Coconut milk
- 2 Cinnamon sticks
- 1 tbsp Tamarind paste
- 1 tbsp Brown sugar
Step-by-step
- Combine the onions, garlic, ginger, chillies and lemongrass in a food processor and pulse to a paste.
- Heat the oil in a large heavy-based saucepan over a medium heat. Add the paste plus the cumin, coriander and turmeric and cook, stirring, for 2 minutes or until fragrant.
- Add the buffalo steak and cook for 2 minutes, or until seared.
- Pour in the coconut milk and 400ml water, then add the cinnamon, tamarind paste, sugar and 2 teaspoons of salt. Simmer uncovered for 2 hours, stirring occasionally.
- Serve the beef rendang with rice and steamed greens.

Fine but its hardly enticing - looks more like a curry from the local supermarket. How about some simpler recipes, no added coconut milk or tamarind. Just fresh vegetables and meat and a few herbs and spices to keep those on healthy diets on track!

I made this using shin beef and it was the most amazing curry. The only thing I did differrent was add some galangal to the spice paste, and added a couple of kafir lime leaves during simmering. I would highly recommend it!

This is a delicious recipe. It is what it is. If you want something more healthy then find it or just eat a bit less.

I entirely disagree with eLJay's comment. If you want a healthy curry, suggest you choose something from the tandoor without sauce. NW4Guru is spot on - this is what it is - either adjust your diet accordingly so you can manage the calorific intake or just eat less! I'd also very much like to know where eLJay shops - no supermarket I have ever been to sells anything like this - which is pretty easy to prepare and in my modest opinion, delicious.

Lighten up eLJay - EVERY meal doesn't have to be an exercise in "healthy" eating. Enjoy a blow out occasionally... EXCEPT, of course, buffalo is very low in cholesterol. This is a GREAT - and healthy meal!

eLJay - Coconut milk is incredibly healthy. And if you need vegetables, that is what side dishes are there for. All the spices do wonders for one's health.
